Rice Paper Wrap With Vegetarian Vietnamese "Nem Nuong" or Pork Skewers...




Ingredients 
Vegetarian Ham Paste ... which can be purchase at an Asian groceries store. For this I use the whole bag of it and it yields about 12 sticks to rolls with rice paper and variety of greens.


 
 (4 )Cloves of Garlic 
(4) fresh chilies 
A quarter of an onion 
2 tbl spoons of sugar 
1 tbl spoon of fresh grind black pepper
2 tbl spoons of sesame oil

2 tbl spoons of mushroom seasoning 
(For the rolls)
rice paper
mint leaves 
basil leaves 
lettuce
cucumber slices length wise (about 4 or 5 inches) 
optional: cake piping bag 
 DIRECTIONS 
1. Thaw out your paste and drain whatever loose liquid.  
2. In a food processor, chop up the garlic, chilies, onions.
3. In a big bowl throw in the paste, garlic, chilies, onions, then add in the sugar, seasoning, black pepper.  Mix them altogether until everything is evenly distributed.  

3. On the toaster oven tray spay nonstick oil all over.
4. If you use a cake piping bag then put the paste in, cut about 1/2 inch at the end and pipe straight lines about 4 or 5 inches onto the tray.

5. Bake in the toaster oven for 15 minutes at broil. 
 The result should look like this. 






If you don't use a piping bag then you can just spread the paste out onto the pan about 1/2 inch thick and in a rectangular shape so you can just cut them up to rolls when you eat.  This is much more time saving than the piping but still give you the same result ...except that the piping gives you a "stick" which makes it fancier that's all! Noticed the green toppings? That's just chopped green onions and oil.  I like the taste of it and it gives my Nem Nuong a glossy and more attractive look.  You can skip that if you don't care for it! =0) Or you could just brush it with regular oil for the looks as well.




And you are ready to eat! 

Dip your rice paper in hot water, lay it out on the plate.  Add in lettuce, mint, basil, cucumber, and your nem nuong...and you're ready to ROLL! 
TAH DAH! 

As for dipping sauce... I didn't bother making my own because the ready made stuff was already super good and perhaps better than my own hehehe. 
Here are the two I always have in handy for these kinds of rolls. 
One is Vegetarian Mam Nem... yes there is such thing as Mam Nem Chay and I found it! LOL 
And the othere is Vegetarian Ready to Eat Fish Sauce (a Vietnamese stable!)
